
I am very excited to share my first ever simple and quick dinner recipe here on my blog!
As a busy mum, one of the biggest challenges in my day is cooking up a nutritious meal after work. When my day at work is done, I am tired and hungry and the last thing I want to do is spend hours in the kitchen.
This recipe is super quick and contains all the good stuff you need in a meal: protein, fiber and carbohydrates.
It is also budget-friendly, made with turkey mince costing around £2.50 for a 500g pack. You can also buy oyster sauce and soy sauce in almost all supermarkets now- they store for ages and can be used in many other dishes too.
My kids really enjoy this, request it often, and now it’s a firm favourite in my house for those days I just want to make a quick healthy meal.

What oyster sauce do I use?
I use the Lee Kum Kee Panda brand and have used this one for many years. Oyster sauce is great on stir fry vegetables and as marinades for lots of other meat and fish dishes too- I always have this stocked in my cupboard!
And the best thing is, they are available in almost all major supermarkets in the UK. There was a time you could only get this in oriental supermarkets!

Quick Turkey Mince And Vegetable Stir Fry In Oyster Sauce

Ingredients
500g / 1.1lbs turkey mince
200g/ 0.441lbs fine green beans, cut in half
1 whole broccoli, cut florets in half
2 garlic cloves, chopped
1/2 onion, chopped
1 tbsp olive oil
1/2 tsp of chicken powder
pinch of salt
2 tbsp oyster sauce
1 tsp light soy sauce
2 cups Jasmine rice (or rice of your choice)
Instructions
- Cut Broccoli florets away from stem (discard stem) and cut in half if too big. Cut fine green beans in half. Place in a medium size sauce pan and boil for 5 mins.
- Roughly chop onion.
- Peel and chop garlic.
- Drain broccoli and fine green beans and leave aside.
- Heat a deep frying pan/wok on medium –low heat. Pour in olive oil and fry onion and garlic for 1-2 minutes- do not burn the garlic.
- Then add in the turkey mince. Cook for 15 minutes or until browned.
- While the meat is cooking, prepare rice as per packet instructions. Keeping an eye on the turkey mince, stirring occasionally to brown evenly. I use a rice cooker- simply wash and rinse the rice, fill with water (water amount will depend on what type of rice you use and how much) and then leave to cook.
- Throw the broccoli and fine green beans into the wok with the turkey mince and mix.
- Add the salt, chicken powder, light soy sauce and oyster sauce. Stir for 1 minute. Serve with jasmine rice and an optional side of Kimchi (I love a bit of Kimchi on the side of all my rice dishes). Enjoy!

Kimchi is a highly nutritious fermented food. It is packed with probiotics and supports your gut health. However it is high in sodium, so must be eaten in moderation.

Notes
- You can swap the vegetables with any other ones you prefer. Broccoli and fine green beans go well with the mince and they are my kids favourite but I have also made this with Asparagus and sugar snap peas.
- If you don’t have chicken powder, use any other chicken stock you have (if using the Oxo cubes, crumble a little over). Any would work. It just adds a little more flavour to the dish.

- Can’t get hold of turkey mince? Use chicken mince instead.
- Don’t have olive oil. Use any oil you have in the house (vegetable, advocado). Olive oil is my personal preference when it comes to cooking.
- You can store any leftovers in the fridge for 4 days.
