
As a busy mum, there’s nothing I love more than a quick and easy snack recipe!
These have easily become my favourite homemade snack. It’s a low FODMAP recipe I first tried through Healthpath when I was following the low FODMAP diet, and I still make them regularly today. I like to batch-make them so I always have a healthy snack on hand for those days when I come home extra hungry from work or for when I just fancy a little treat.
They are the one snack I make that absolutely everyone enjoys- even the fussy kids!

No Bake Chocolate Bites

Ingredients
3/4 cup Natural Peanut Butter (I use crunchy peanut butter)
1/4 cup Maple Syrup
1/4 cocoa Powder
1 ½ cups Oats
1/4 tsp Sea Salt
1 tsp Vanilla Extract
1 ½ tbsp Coconut Oil

Instructions
1. In a small saucepan over a low heat add the peanut butter, maple syrup and cocoa powder. Stir to combine until just heated through and somewhat dried out in texture. Allow to cool slightly.
2. Pour the peanut butter mixture into a bowl and add the oats, sea salt, vanilla extract and oil. Mix well with spoon or your hands.
3. Line a baking sheet with parchment paper (make sure you line a tray that will fit into your freezer). Form the dough into golf ball sized balls (you can flatten them to look more like little cookies if you like, I like to keep them round). Place them on the baking sheet and repeat until all of the dough is used.
4. Place them into the freezer to set for about 2 hours. Then remove and place them in a freezer bag or container. Keep them stored in the freezer until ready to eat.
Remove them as you want to eat them. Allow them to sit at room temperature for about 5 minutes to soften. Enjoy!

Notes
- Use slightly damp hands when forming into balls.
- I keep mine stored in a zip lock bag in the freezer.
- I double the ingredient list to make a big batch because seriously, everyone in my household loves these- they go super fast!
